Every year we host the neighborhood Easter egg hunt. And every year, I try to come up with some festive Easter desserts to make. This year I decided to make an Easter Bunny cake. While I’m very happy with how it turned out, I always need two Easter desserts because one cake will not be enough to serve thirty people. So I decided to make Easter Bunny cupcakes as my second dessert. Well, actually, I baked the cupcakes and my daughters decorated them. Since this is not a cooking blog, but a kids’ activities blog, I hope you can appreciate their creative efforts!
Here’s What You Need to Make Easter Bunny Cupcakes:
- Bunny cupcake pan (I found mine at Target.)
- Cooking spray
- Cake mix
- Vegetable Oil
- 3 Eggs
- Icing with decorating tip (white, pink and purple)
Here’s How to Make Easter Bunny Cupcakes:
1. Spray the bunny cupcake pan with cooking spray.
2. Prepare the cake mix according to the instructions on the box.
(We used Pillsbury Funfetti cake mix because we thought the pastel specks were festive.)
3. Spoon the cake mix into the bunny cupcake pan, but only fill each segment half way.
(I overfilled the cupcake pan a bit. So after they cooled, I just cut off the rounded part of the cupcakes so they were flat on the bottom. My girls and I enjoyed eating the benefits of this little mistake!)
4. Bake the cupcakes according to the instructions on the cake mix.
5. Once they are cool, remove the bunny cupcakes by flipping the pan over.
6. Use white, pink and purple icing to decorate these Easter Bunny cupcakes any way you want to!
I like Easter desserts that are not only yummy, but easy to serve. I get stressed trying to cut a big cake while everyone is waiting for their dessert! That’s why these Easter Bunny cupcakes, the Easter Bunny cake and the Jello Bunnies are great Easter desserts for me.
